12 Days of Home for the Holidays: Welcome Lindsey Moore from Cosmo Cricket

Please welcome Debby's Dare first guest of the 12 Days of Home for the Holidays, Lindsey Moore, Director of Sales for Cosmo Cricket.  If you follow the Cosmo  Cricket blog you will see Lindsey in some of the pre-CHA (Craft and Hobby Association) videos teasing their readers about the new line of products coming out.  You have to know Lindsey has a keen sense of humor that I've enjoyed both at CHA and via email in the past.

Welcome Lindsey Moore!

At the Moore Household the holidays are the highlight of the year, especially Christmas. Christmas Eve we invite friends and extended family over to our place. Before Christmas eve dinner we have a short program. We begin as a group sing Joy to the World (it’s a good thing that my kids have their mom’s singing ability- not the Three Dog Night version), but the Christmas one.

After we sing we sit down and read the story of Jesus birth, as recorded in Luke of the New Testament. We conclude singing Silent Night.

Sometimes, if there are younger children present, I will read the poem by Dr. Seuss, “How the Grinch Stole Christmas.” I love that poem!

One thing my kids love to do on Christmas Eve is to go out Candy Caneing. This is kind of like Toilet Papering someone’s house. We usually pick three or four families with young children. We buy boxes of different flavors of Candy Canes and tape hundreds to their door and plaster their porch with them. We attach a letter that states, “ you’ve been Candy Caned!”

After we have a Christmas Eve Dinner and we serve homemade Egg Nog. In one of the cups of the Egg Nog there is an almond. If you’re lucky enough to get that particular cup, there is a wrapped present for you.

Christmas day the kids (5 of them 17-25), get up at 6:00AM. We open presents one by one. They go back to bed.

Both Christmas Eve and Christmas Night my kids play games until far into the morning with their mom.

Christmas we have friends and family over, everyone brings their favorite dish, and we cook a Prime Rib. Below is a recipe I like to use.

Ingredients
1/2 cup brown sugar
2 teaspoons ground cumin
2 tablespoons ground black pepper
2 tablespoons ground coriander
1/4 cup chili powder
2 tablespoons kosher salt
1/4 cup soy sauce
1/2 cup chili powder
3 tablespoons Cajun-style blackened seasoning
6 pounds prime rib roast, bone in
2 cups water

Directions
1.  In a medium bowl, mix together the brown sugar, cumin, black pepper, coriander, 1/4 cup chili powder, kosher salt, and soy sauce. In a separate small bowl, mix together 1/2 cup chili powder and blackened seasoning. Set aside.
2.  Cut ribs from roast, and place in a roasting pan. They will act as a roasting rack. Rub the meat all over with the soy sauce mixture. Then rub and coat with the Cajun seasoning mixture. Let marinate for at least one hour or wrap in plastic, and chill overnight.
3.  Preheat the oven to 500 degrees F (260 degrees C).
4.  Remove any plastic from roast, and place pan into the preheated oven. Roast uncovered for 15 minutes in the preheated oven. Pour water into the pan to produce moist heat. Reduce oven temperature to 300 degrees F (150 degrees C), and continue roasting for 1 hour and 10 minutes, or until the internal temperature is at least 130-140 degrees F/55-60 degrees C) for medium rare, or (145-155 degrees F/63-68 degrees C) for medium . Let the roast stand for 30 minutes before carving to let the juices return to the center.

Merry Christmas everyone!

  20. Cool web series, Deb! And it was great to get to hear about Cosmo's founder's holiday traditions. Candy Caning is quite a clever idea. I don't know how they manage to be quiet enough not to wake up the people in the house. We'd have way too much giggling, I think!
