Day 8 for the 12 Days of Home for the Holidays: Welcome Connie Mercer!

Hi everyone!!

December is finally here and that means Darryl's Fruit Cake to me. I make these lovely's and enjoy them all year long. My family thinks I'm crazy ~ fruit cake is not their thing but with a cup of coffee, on a cold day, and a slice of this goodness it just doesn't get any better than that. I bake them in the small loaf pans ( 2 1/2 x 4 1/2) for 45 minute. When they are done and cooled wrap them in Saran Wrap and then foil and put them in the freezer and take them out one at a time. I'm convinced no weight gain will happen if you follow these instructions!



Darryl's Fruit Cake
1 lb. dates cut in thirds
1 lb. candied pineapples ( chopped)
1 lb. red and green cherries
1/2 C brandy ( cherry or apricot)
2 C flour
2 tsp. baking powder
1 tsp salt
4 eggs
1 C sugar
3 Tbsp vanilla
2 lbs pecan halves

Mix fruits with brandy and let sit over night ( stir a few times) on kitchen cabinet.

The next day mix flour, baking powder and salt with fruit. Beat eggs stir together with sugar, vanilla ~ add to fruit/flour mixture along with Pecans. Spoon into baking pans lined with wax paper or spray loaf pans with Bakers Pam. Press mixture into pans and bake at 275 degrees. After baking let stand for 5 minutes before removing paper. The fruit cake will be moist and may not seem cooked long enough.

When cool, wrap and refrigerate or freeze. Aging improves the overall flavor!!!

Oh, my goodness I can smell the cake baking throughout the house.  I don't know about that weight gain thing, but I'll give it a shot!  Mom made fruit cakes when I was growing up.  Early on I didn't care for it, but as I grew I loved my mom's and grandmother's fruit cake.  I'm going to have to give Connie's recipe a try.  It look delish!  Thanks for sharing Connie.

    well maybe not the kitchen, I hate to cook..... just the scraproom!!

    The layout is gorgeous and I bet these fruitcakes taste so good because you use your own home grown pecans!! When I grow up, I wanna be YOU! hehe:)

Connie, I absolutely love this layout...it almost looks like the ingredients are layed out....I have tried this recipe of connnie's ya, and I am NOT a fruitcake person, but it is scrumptious...you will not be sorry one little bit. I'm making it again this year...thanks for the inspiration, cuz I am making the cakes just so I can do the layout, hahaha....

  11. Beautiful LO! I've never tried this fruit cake recipe but there is a first time for everything! How fun to see the recipe put here for all to use...what a great idea!
